To me Applejack is perfect for the Green Lantern Corps, more than anypony else.
She has enough will power to buck half of the Sweet Apple Acres by her self and can overcome her fear to show weakness by asking for help to buck the other half.
However I don't think that she can be very creative with her constructs, but that never stopped Hal Jordan, right? XD
I know that there is a lot of crossovers like this, but I don't give a damn. XD

It's probably a help if her constructs are simple and basic. It means she isn't expending willpower and ring charge on holding together something that's really complicated against an enemy that's trying to break through her defenses and kill her.
And since it's Applejack, it's probably gonna be farm themed. Atomic Apple Gauss Cannon, anyone? Or Molecular Monofilament Chop-Axe? Green Shovel of Ass-Whuppin? Combine Harvester of Great Justice?
